Southwest Taco Soup

I tried some new recipes last night and tonight and both weren't worth sharing. Instead of something new, I will share one of the recipes that sometimes makes multiple appearances at our dinner table within a month. This is also very easy to make, you will see why when you read the ingredients.

Southwest Taco Soup
1 lb. Ground Beef
1 Onion (chopped)
1 package Taco Seasoning
1 can Stewed Tomatoes
1 can Tomato Sauce
1 can Corn (drained)
1 can Kidney Beans (drained)
1 can Black Beans (drained)
2 cups Water
Toppings:
Grated Cheese
Corn Chips
Sour Cream (spoonful in your bowl)

Brown ground beef & onions in frying pan. Combine all ingredients into a large soup pan. Bring to a boil. Serve with toppings. Freeze extra. (All canned ingredients are the 15oz. size can)

We used ground turkey to make it lower fat/cholesterol. It was yum-yummy

Another favorite Sara has served us many times. Good leftover too...even Jess will eat it the day after. He's not a leftover kind of guy...not my doing (I don't think ;)

I made this for the first time the other night and took to the ward party (soups & stews). It was one of the few gone at the end of the dinner. I did put a label/sign in front of it so maybe that had something to do w/it. I think most of us like to know what we're eating :0 Jodi made it for her and Jon and it was a hit there too!
